Cool Kids Creamy Artichoke Dip Recipe for Jr. Chefs


So it’s time for another monthly recipe.

 In April we have quite a few surprises for our Jr. Chef’s, including a special Parent/Jr. Chef cooking class event on Sat April 21st. .

In May I  have a very special Teens only BBQ class on Memorial Day (So they can help out later) and maybe give their parents a few pointers on the grill. I also have the Cool Kid’s Favorites Class back and a Quickie Snacks class for Jr. Chefs.

Cook Kids  Creamy Spinach and Artichoke Dip

 Ingredients:

 2 cups parmesan cheese, freshly grated, (this is crucial, do not use Kraft or other products like this for this recipe)

1 box frozen chopped spinach, thawed and squeezed dry in paper towels

1 (14 ounce) can artichoke hearts, drained and chopped or frozen artichokes, thawed and gently dried in paper towel;  roughly chop half and slice the other half into large pieces lengthwise.

 2/3 cup sour cream (you can use low fat if you want to)

1 cup cream cheese (You can use low fat if you want to)

1/3 cup mayonnaise

2 teaspoons garlic, minced

For topping:

3 tablespoons Italian bread crumbs

3 tablespoons grated Parmesan cheese



Directions:

Preheat oven to 375°F.

Gently mix together Parmesan cheese, spinach, and artichoke hearts.

Combine remaining ingredients in another bowl and blend with spinach mixture.

Place in prepared baking dish.

Top with bread crumbs and more grated cheese.

Bake for 20-30 minutes.

Serve with tortilla chips, crackers or toasted Italian bread.
