Cool Kids Rainbow Veggie Tray for St Patricks Day

Kids can practice knife skills and hand eye coordination for this recipe

Please use adult supervision at all times when there are
  sharp objects close by or kids are using knives.


Awesome Leprechaun Rainbow Veggie Tray

You will need:

2 Sweet Red Bell Peppers
2 Sweet Orange Bell Peppers
2 Sweet Yellow Bell Peppers
3 cups Green Snap Peas
1 small Cauliflower Head
2 cups Ranch Dressing
1 small Ripe Avocado (Optional if you want Lucky Green Dip)

Insturctions:

Help your child wash the vegetables and dry them explaining why we wash produce before eating it.
Help get small children started by slicing the peppers in half.  Show them how to pull off the core and empty the seeds. Rinse one more time if the seeds are still clinging to the inside.
Show the child how to slice the peppers into sticks and lay them on a tray in an arch shape and form a rainbow with the different colors.
Follow with the snap peas by snapping off any stem pieces with fingers. Lay them under the rainbow forming a green bed like grass for the rainbow to land on.
Break the cauliflower into round pieces and ly them along the bottom creating flowers ontop of the green bed.
For the dip, you can mix a very ripe avocado with the ranch dip and create a Lucky Green Dip for your vegetables.
